SWEET VEGETABLE FRITTATA RECIPE

*serves 6

  • 1 red capsicum, diced
  • 6 large eggs
  • 100g spinach leaves
  • half an onion
  • 40g parmesan
  • 25g feta, crumbled
  • 400g sweet potato, diced & boiled or roasted
  • garlic cloves, minced
  • basil leaves, minced
  • salt and pepper to taste
  1. Preheat oven to 180 degrees
  2. Chop and prepare all ingredients as suggested above
    – I roasted the diced sweet potato for around 30 mins and panfried the onion, capsicum and spinach leaves so that they were pricked prior to baking)
  3. Combine all ingredients, except for feta, into a bowl and stir to combine
  4. Line baking dish with baking paper
  5. Pour ingredients into dish
  6. Sprinkle the crumbled feta cheese on top
  7. Bake at 180degrees for approximately 30 minutes
  8. Remove from oven
  9. Serve and enjoy!
