SAVORY CHEDDAR MUFFINS

INGREDIENTS:
  • 1 3/4 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 cup butter, melted
  • 1 egg, lightly beaten
  • 1 cup milk
  • 1 garlic clove, minced
  • 3/4 cup cheddar cheese, finely shredded
  • 1/4 cup grated parmesan
  • 1/4 cup diced tomatoes
  • 1/4 cup Szagorskis Hot & Sweet Peppers
  • Italian herbs & chives to taste

COOKING INSTRUCTIONS:

  1. Preheat oven to 350F (175C)
  2. Spray 12 muffin cups with cooking spray
  3. Mix flour, baking powder, baking soda, salt, pepper & spices in a large bowl
  4. In another bowl, stir together the butter, egg, milk, and garlic until well blended
  5. Mix the flour mixture into the milk mixture, adding about 1/2 cup at a time, until completely combined
  6. Fold in the Cheddar cheese, Parmesan cheese, tomatoes & peppers
  7. Pour batter into the prepared muffin tray
  8. Bake in oven for approximately 20-30 minutes or until golden
  9.  Allow muffins to cool slightly before removing from muffin cups
  10. Serve warm or chilled- refrigerate leftovers.
  11. Enjoy as an on-the-go breakfast or as a healthy yet fulfilling snack.
