Ingredients

1lb 93% lean ground turkey
200mL  mild salsa
150g chili beans (drained)
250mL 0% fat greek yoghurt
2oz olives, sliced & drained
2 cups spinach leaves
100g onion, diced
100g green peppers, diced
200g fresh tomatoes, diced
100g mozzarella cheese, grated
20g parmesan cheese

Method

  1. Preheat oven to 350F (175C).
  2. In a large pan, cook onion, green peppers & ground turkey over medium heat
  3. Stir in salsa & reduce heat to a simmer
  4. Simmer for 20 minutes, or until liquid is absorbed
  5. Stir in beans until combined
  6. Spray a 9×13 baking dish with olive oil spray
  7. Spread turkey mixture on base of baking dish before spreading layer of greek yoghurt over that
  8. Top yoghurt with olives & tomato
  9. Sprinkle grated mozzarella and parmesan cheese on top

  10. Bake in preheated oven for 20 minutes, or until hot and golden
  11. Serve & enjoy.
