Ingredients

For the sweet potato mash:
2 large boiled sweet potatoes
2 cloves of garlic
Salt to tast
Ground black pepper, to taste
For the filling:
500g turkey or chicken mince
1/4 cup water
1 medium yellow onion, diced
3 stalk2 of celery, chopped
2 medium carrot, chopped
4 cloves garlic, minced
1 cup water
1 tbsp tomato paste
1 tsp oregano (or italian spice blend)
Salt, to taste
Ground black pepper, to taste
Ground paprika (for garnish only)

Method

1.Preheat oven to 320F/180C. Spray a baking dish with non-stick spray
2. Put the cooked sweet potato chunks into a blender
3. Add remaining ingredients and mix
4. In a large frying pan over medium heat, add mince and 1/4 cup water. Cook until it is fully white.
5. Add the vegetables and additional water if needed and cover with a lid for 5 – 10 minutes or until vegetables are steamed.
6. Add the tomato paste, water, spices (except for paprika)  and stir
7. Continue to let it cook until additional water/liquid has evaporated
8. Add the mixture to the baking dish
9. Spread the mashed sweet potato mixture on top
10. Sprinkle with paprika and parmesan
11. Place in oven and bake for 20 minutes.
12. Allow to cool for a few minutes before serving.
