You might have seen it take over the internet? The 1-carb waffle? Well I was ALL about that until I didn’t have a waffle machine, nor the desire to buy one. So instead, I present to you… the 1-carb pancake recipe.

Although hardly a meal (as it only contains protein and very little other macronutrients) it can be worked in as a healthy alternative to carb heavy pancakes! I would suggest topping them with your favorite fruits, nuts and yoghurt or if you want something a little more savory, perhaps try it with a side of eggs and bacon too!

Once again, as with all my protein powders and supplements, I use Vegan Shakeology and can vouch for the consistency and flavor of it’s use in this recipe. Some whey proteins or low quality products can alter the flavor, taste or density.

Instructions
  1. Add protein and water to a shaker bottle and shake to mix.
  2. In a mixing bowl, add the protein powder/ water mix with the egg white, cinnamon and baking powder and mix well until combined.
  3. Spray pan with cooking spray or coconut oil and heat on medium/low.
  4. Once pan is hot, pour batter to make pancakes.
  5. Cook pancakes for 2-3 minutes or until they puff up, before flipping gently and repeat on the other side.
  6. Remove from pan and top with your favorite things (remember this is not included in the listed calorie count)
  7. Serve and enjoy!
