This recipe does check all the boxes. The only tough part of this recipe is deciding what to serve it with! This Apricot Chicken can be served on top of boiled rice, mixed steamed veg, potatoes, cauli rice, zoodles or anything you like! And side note: Don’t feel that you have to limit this dish to the oven. It can be created in a slow cooker, instant pot or even on the grill!

Dice all vegetables as suggested above and place into a microwave safe/oven proof casserole dish with lid
Boil carrots until almost tender
Remove carrots, drain and add to casserole dish
Dice chicken and add to veg mix
Mix apricot nectar with dry french onion soup mix in another bowl or jog
Once combined, pour over chicken and veg mix and toss through
Cover and place in microwave or oven at 375F for approximately 40 minutes, stirring occasionally, until chicken is cooked through
Remove and let stand for several minutes
Serve on top of rice, mixed steamed veg, cauli rice, zoodles or anything you like. REMEMBER that anything you add will alter the macros/calories of this dish so adjust accordingly to suit your intake
