These bacon, cheese & spinach loaded chicken breasts are SUPER easy to make, low carb and taste like a treat: although provide an impressive amount of protein! This is also a family pleaser as it requires only one pan to prepare the meal, as ingredients are pan seared then finished in the oven. Did I mention it also completed from start to finish in 30 minutes?  Yup, believe it!

  1. Preheat oven to 400F degrees
  2. Slice each chicken breast in half horizontally by placing your hand on top of the chicken breast and slicing into the side of the chicken breast.
  3. In a skillet, cook bacon until you’ve reached your desired consistency
Here is the secret sauce, DO NOT drain the bacon grease!
  4. Season chicken breast halves with garlic powder and pepper, then pan fry in bacon grease until fully cooked
  5. Remove chicken from pan and place in a baking dish
  6. Add sliced cheese on top and place in oven until cheese has melted
  7. Meanwhile, add spinach to THE SAME PAN and sauté
  8. Remove chicken breasts from the oven, top with bacon and spinach
  9. Serve & enjoy!
