Banana & Coconut Muffins
  1. Preheat oven to 325F degrees (165C)
  2. Line muffin tray with either patty pans or lightly grease with spray olive/ coconut oil
  3. In a large mixing bowl, add the oil and honey and mix together using a fork
  4. Add the eggs and beat well, then whisk in the mashed bananas and milk
  5. Add in the baking soda, vanilla extract, coconut and cinnamon, and stir to combine
  6. Finally, stir in the oats/flour until evenly coated and combined
  7. If you’re adding any additional mix-ins, gently fold them in now!
  8. Spoon the batter into the muffin tray and top with sliced bananas, cinnamon, coconut, crushed nuts or cranberries (anything goes!)
  9. Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean
  10. Remove fro oven and allow muffins to cool on a wire rack
  11. Best served warm with peanut butter & coffee – just saying 🙂
  12. Enjoy.
