Can I get an AMEN for a seriously successful Meatless Monday that I nailed yesterday! This meat-free & vegan-friendly Jackfruit Nacho meal was a huge hit, even for my carnivorous husband! The pulled jackfruit & BBQ sauce combo made for the perfect pulled pork substitute! Easily adapted to be dairy-free & gluten-free… this meal is sure to be a crowd pleaser!
BBQ Jackfruit Nachos
Use a strainer to rinse canned jackfruit thoroughly
Add olive oil to a preheated pan over medium-high heat
Add rinsed jackfruit & cook for 5 minutes
As the jackfruit softens, use 2 forks to "pull" the jackfruit until it resembles pulled pork
Reduce heat to medium & sprinkle with onion powder, chipotle powder, and salt (optional) over jackfruit. Stir to coat evenly
Add BBQ sauce and stir well until jackfruit is evenly covered in sauce
Cook for a further 5 minutes, then remove from heat.
Cover baking tray with parchment paper
Lay tortilla chips out on a baking sheet & spread with cheese, pinto beans, cabbage, tomatoes and onion
Add the jackfruit then sprinkle with more cheese
Put the tray in the oven for approximately 10 minutes, or until the cheese is melted and golden brown
Remove from oven, top with avocado (or make guac) and serve with sour cream/ yoghurt or any favorite additional toppings!
Jackfruit can be purchased fresh, although can be a struggle to find in certain stores. Canned jackfruit is sold in either brine, water or syrup. Be sure to only select cans that are labelled "in brine" or "in water" as the syrup covered jackfruit is super sweet (and certainly not as healthy!)
