Instructions
  1. Preheat oven to 400°F
  2. Use a strainer to rinse canned jackfruit thoroughly
  3. Add olive oil to a preheated pan over medium-high heat
  4. Add rinsed jackfruit & cook for 5 minutes
  5. As the jackfruit softens, use 2 forks to "pull" the jackfruit until it resembles pulled pork
  6. Reduce heat to medium & sprinkle with onion powder, chipotle powder, and salt (optional) over jackfruit. Stir to coat evenly
  7. Add BBQ sauce and stir well until jackfruit is evenly covered in sauce
  8. Cook for a further 5 minutes, then remove from heat.
  9. Cover baking tray with parchment paper
  10. Lay tortilla chips out on a baking sheet & spread with cheese, pinto beans, cabbage, tomatoes and onion
  11. Add the jackfruit then sprinkle with more cheese
  12. Put the tray in the oven for approximately 10 minutes, or until the cheese is melted and golden brown
  13. Remove from oven, top with avocado (or make guac) and serve with sour cream/ yoghurt or any favorite additional toppings!
Recipe Notes
Jackfruit can be purchased fresh, although can be a struggle to find in certain stores. Canned jackfruit is sold in either brine, water or syrup. Be sure to only select cans that are labelled "in brine" or "in water" as the syrup covered jackfruit is super sweet (and certainly not as healthy!)
