Bruschetta Chicken
  1. Spray a large pan over medium heat with cooking oil
  2. On a plate, season chicken with oregano, salt, and pepper
  3. Add chicken to pan and cook until golden and no longer pink
  4. In a large bowl, make bruschetta topping by combining tomatoes, olives, garlic, breadcrumbs and onion
  5. Season generously with salt and pepper
  6. Add bruschetta mix to smaller pan and simmer for 2-3 minutes
  7. Remove chicken from pan and place on dinner plates
  8. Top chicken with bruschetta topping, shaved parmesan and shredded mozzarella
  9. Serve & enjoy.
