The faster fall approaches, the more and more I crave ALLLL the hearty Fall comfort meals! I’m talking pumpkin, sweet potatoes, casseroles and all that jazz. If it were just me, I could possible live off the same few recipes on rotation season round… but considering my husband associated Fall with Football, his menu would ideally consist of just wings and pizza! haha
So, I decided that I wanted to try what I have now named a “combo casserole”. Ladies and gentlemen, I give to you my BUFFALO CHICKEN SWEET POTATO CASSEROLE!
The flavors go perfectly together and the sweetness of the potatoes compliment the spicy wing sauce so well. I don’t eat red meat, but I added bacon pieces to Scott’s half of the dish, which he loved and adds some fats and a little extra crunch, along with the celery too! Now you’ll notice I used feta but ideally I would use blue cheese and ranch to top this dish, just to really stay on point with the theme!
