Cauliflower has become one of the most versatile vegetables. For cauli rice, to oatmeal to hash browns and now… pizza! In this easy, gluten-free pizza recipe, you’re basically making cauli rice to use as the base for your crust and then binding it together with egg (or egg substitute for my vegan friends) before topping it with all your favorite things!

  1. Preheat oven to 400F
  2. Line a large baking tray with baking paper
  3. Process the cauliflower in batches until rice size pieces
  4. Place in a microwave safe bowl and microwave, covered, on high for 5-7 minutes or until tender
  5. Allow to cool
  6. Combine egg white, parmesan, garlic and parsley in a large bowl
  7. Add “cauliflower rice”and stir to combine
  8. Spoon onto lined baking tin and bake for 25 minutes or until golden
  9. Remove from oven and coat surface with tomato paste
  10. Top with all your favorite pizza toppings (see ingredients list above for my choices)
  11. Place back into oven for a further 10-15 minutes or until cheese has melted
  12. Serve and enjoy!
Recipe Notes
PLEASE NOTE: You MUST drain the cooked cauliflower, as it keeps the crust dry and ensure that it crisps up during the baking process.
