Cheesy Cauliflower Gratin
  1. Prepare ingredients by cutting or breaking cauliflower into small florets, dice the onion and grate cheese
  2. Preheat broiler
  3. Place cauliflower, half the cashew milk, salt and pepper in a large
  4. pan and cook over medium-high heat
  5. Cover and simmer until the cauliflower is soft
  6. In a seperate small pan, saute the onions and garlic until onions become transparent, remove from heat and set aside
  7. In a small bowl, whisk the flour, half the mozzarella cheese and
  8. remaining milk in another small bowl until smooth and “runny” and
  9. then slowly combine this flour mixture into the cauliflower pan
  10. Stir in the remaining cheese, chives, mustard, salt & pepper to the
  11. cauliflower pan and stir until thick and all cauliflower florets are covered
  12. Remove mix from heat and flatten into a deep glass oven tray (lined with parment paper or sprayed with oil)
  13. In a small bowl, mix breadcrumbs, parmesan cheese and oil- sprinkle on top
  14. Broil until the top is crispy and beginning to brown Serve & enjoy!
