Choc Chip Banana Bread Muffins
  1. Preheat oven to 350F (175C)
  2. Lightly spray muffin trays with either coconut oil or olive oil (skip this step if using patty pans)
  3. In a large bowl, combine flour, baking soda & cinnamon
  4. In a separate bowl, stir together softened butter and brown sugar
  5. Stir in eggs and mashed bananas until well blended
  6. Stir banana mixture into flour mixture until combined
  7. Fold in desired amount of choc chips
  8. Pour batter into prepared muffin trays (top with crushed nuts if desired)
  9. Bake in preheated oven for 20-30 minutes until top becomes golden & toothpick comes out clean
  10. Let muffins cool in pan for 10 minutes, then let them cool on a wire rack.
