I was tempted to name this recipe “Unicorn Banana Bread” because honestly, it’s appropriate. Not only is this banana bread gluten and dairy free, but it tastes, smells and IS delicious. Sometimes substitute ingredients ruin the consistency, flavor or texture of things… and the last thing we want to do is tamper with the ever wonderful banana bread, but I think it improves it!
Better still, there are very few dishes to clean up after baking as it is a one bowl masterpiece. It doesn’t even require a mixer! Plus it can be stored in an air-tight container so cook once/eat twice!
