A super healthy, easy delicious summer recipe. The subtle and light lemon oil marinade makes the grilled chicken moist and tender and then crunch from the celery along with the creaminess of the feta is divine!

Grilled Lemon Chicken with Feta Rice

  1. Combine chicken, 4 tablespoons lemon juice, 1 teaspoon olive oil and garlic in a zip lock bag. Toss to coat chicken and let stand for 5-10 minutes
  2. Heat a grill pan over medium to high heat
  3. Coat pan with cooking spray
  4. Remove chicken from bag and discard left over marinade
  5. Sprinkle chicken with salt and pepper then grill for approximately 6 minutes on each side
  6. While chicken cooks, heat rice according to package instructions
  7. Combine rice, celery, feta, pepita seeds and basil in a large mixing bowl
  8. Serve chicken breast on top of rice
  9. Eat and enjoy!
