Calling all pancake lovers. Better yet, calling all LAZY pancake lovers! These super simple, low carb + high protein pancakes are the perfect breakfast, snack or meal prep option for anyone who loves food, but hates cooking! Seriously, make a whole batch in one go and then freeze or store in the fridge: just reheat or eat them cold- trust me, they’re equally delicious.

I use a vegan vanilla protein powder, but feel free to use what you like. Get creative with your toppings or add-ins: Blueberries, chocolate chips, even peanut butter would be incredible stirred into the mix.

Instructions
  1. In a small bowl, stir egg whites, 1/2 scoop protein powder and cinnamon until combined
  2. Spray pan with olive oil to prevent sticking and pour mixture into pan
  3. Heat until cooked- you may have to flip it!
  4. Remove from pan and serve on small plate
  5. Add toppings of choice- I added yoghurt mixed with additional protein powder, banana slices, strawberries and some homemade granola. However, feel free to get as naughty or “clean” as you need to!
  6. Eat and enjoy!
