Cereal may have a bad name for itself, but this muesli can hold it’s own. It is a wonderfully balanced breakfast with its combination of all 3 macronutrients: carbohydrates from oats, healthy fats from the added seeds, nuts and protein from the milk too.  Plus, let’s not forget the fibre, vitamins, omega 3 and other minerals thanks to those dried fruits, nuts and additions such as wheat/ bran flakes also.

Muesli can be served on top of greek yoghurt, added to smoothie bowls, mixed and baked with peanut butter to create bars or served on its own. Get creative: change up the fruits, nuts and seeds to create your own motivational muesli.

Instructions
  1. Preheat the oven to 180C/350F
  2. Place all ingredients (except for the cranberries) into a mixing bowl and stir until combined
  3. Line oven tray with baking paper and spread dry mixture evenly over tray
  4. Drizzle coconut oil over the top
  5. Bake in oven for approximately 15 minutes or until golden brown
  6. Remove from oven and allow to cool completely
  7. Add cranberries and stir to combine
  8. Place in air tight container to store and ensure freshness
