This recipe is super special to me! Back in 2015, I had to have surgery on both my feet. I had terrible stress fractures so the surgeon had to go in, break my bones and re-pin them…it was brutal. As Scott and I lived in an apartment that required me to walk up and down stairs and have very little way of getting around, I moved back in with my mum and dad for about a month so my Mum could take care of me! #angel

Although she was pleased to play nurse, she did mention how nervous she was having to cook for me (especially in the first few weeks when I was bed bound) as I do like to eat uber healthy. Needless to say, she asked her friends in her ladies group for some delicious, clean meals. With the help of her friends and some modifying on my Mum’s behalf (she held off on the sugar and added raisins instead!) she came up with this Bircher Muesli recipe, that has been a staple in my diet ever since!

I’m pretty sure I requested this for breakfast most mornings, which she didn’t mind about at all! Apparently you can make several serves and it keeps in the fridge for 4-5 days. Win!

MUMMA’S BIRCHER MUESLI
Instructions
  1. Mix oats, milk, bran, apple, sultanas and cinnamon together into a large glass bowl
  2. Place in fridge overnight
  3. In the morning, stir in yoghurt, slice strawberries and add to mixture, along with any added extras you desire.
