If ever the word ‘Casserole’ could go in the same sentence as ‘Masculine’… this is the recipe that fits the title! One pan, one baking dish, some staple ingredients that are most likely in your freezer and pantry and you’ve got yourself a meal!

This recipe is so versatile: I’ve served this casserole on top of tortilla chips, sweet potato mash, boiled white rice and even steamed greens. It literally goes with everything! I wouldn’t doubt that you could serve it as taco filling too!

Try serving it with any or all of your favorite toppings too. These are some of our favorites: additional sour cream or greek yoghurt, avocado, cilantro & jalapeños (not included in macros/calories)

Nacho Casserole
  1. Preheat oven to 350F (175C).
  2. In a large pan, cook onion, green peppers & ground turkey over medium heat
  3. Stir in salsa & reduce heat to a simmer
  4. Simmer for 20 minutes, or until liquid is absorbed
  5. Stir in beans until combined
  6. Spray a 9×13 baking dish with olive oil spray
  7. Spread turkey mixture on base of baking dish before spreading layer of greek yoghurt over that
  8. Top yoghurt with olives & tomato
  9. Sprinkle grated mozzarella and parmesan cheese on top
  10. Bake in preheated oven for 20 minutes, or until hot and golden
  11. Serve & enjoy.
