Protein Pikelets that are exactly that: high in protein! Plus, these little beauties are not filled with all the nasties that the store bought variety include! Not only are they quick & easy to prepare (not to mention super cute) but they also DO NOT contain refined grains (thanks to the oats) or refined sugars either (depending on what you top them with…lay off the syrup folks and no one gets hurt!)

Not only are you getting the incredible benefits from the whole, clean ingredients, but the high protein content is thanks to the eggs/egg whites and the scoop of protein powder per serve too. If you want a clean, plant based protein I suggest Vegan Shakeology (in any of the flavors, they’re ALL to die for) as not only are the ingredients tried and tested but the consistency is always perfection!

Instructions
  1. Place all ingredients except for water/milk into a large mixing bowl
  2. Using a hand held blender, blend until combined (approx. 20 seconds)
  3. Slowly stir in water/milk until reached desired consistency
  4. Heat pan on medium heat
  5. Add coconut oil until heated
  6. Pour/ spoon mixture into pan to form small circles of batter
  7. Heat until firm and golden then flip and repeat
  8. Serve with all your favorite toppings!
