Slow cookers in general are an absolute God send, but this Moroccan Chicken dish is on a whole new level. I love that this meal has all the sweetness from the dried fruit but loaded with plenty of nutrition and exotic spices too. Feel free to play around with the spice list too! I made this one rather ‘family friendly’, but if you are  chasing a little more of an authentic flavor, load up on the spices used!

Slow Cooked Moroccan Chicken

  1. 1. Combine all spices and minced garlic in a small bowl and set aside
  2. 2. Melt the coconut oil on medium heat in a large skillet and cook diced chicken pieces for 3 minutes on each side
  3. When chicken is done, add onions to pan and sauté for 3-4 minutes
  4. Add spice mixture and sauté another 30 seconds to bring out the flavors
  5. Add stock to slow cooker and then pour entire mixture  over the chicken in the slow cooker
  6. Add the dried apricots, chopped sweet potatoes and carrots
  7. Cook on low for at least five hours
  8. Enjoy whilst hot.
