I’ve never met anyone who doesn’t love spinach artichoke dip! Right? So, I’ve turned this crowd pleasing appetizer into a meal so that I no longer feel guilty about over indulging on an appetizer and saving no room for my main meal. Anyone else relate? 

Plus, this dish is high in both protein and healthy fats so that it will keep you feeling fuller for longer. Serve this cheesy plate of goodness along side some garlic bread or on top of a bed of rice or pasta to lap up that sauce! Wanting a low carb option? How about serving it on top of a bed of greens, sautéed spinach or some broccoli?

Spinach & Artichoke Chicken

Instructions
  1. Preheat oven to 350F
  2. In a medium mixing bowl combine spinach, artichoke hearts , cream cheese, parmesan cheese, garlic, onion powder salt and pepper
  3. Mix well
  4. Slice chicken breast in half length ways (so they cook faster!)
  5. Place raw chicken breast onto a parchment paper lined baking dish
  6. Pour mixture evenly over the chicken
  7. Bake in oven for 30-45 minutes , until chicken is cooked
  8. Remove from oven and sprinkle mozzarella cheese on top
  9. Place back into oven for few minutes until cheese is melted or broil for a few minutes to make the cheese crispy & golden on top
  10. Serve & enjoy.
