Let me set the scene. We are at an event and we’ve met another couple that we instantly gel with. We’ve chatted for hours on end as we have so may similarities. So as it gets to the end of the night, we begin making plans to meet up again sometime soon for a meal. I mention that I love to cook and entertain, so I offer them to come over for dinner the following week. This is where I find out…our new BFFs follow a keto diet.

No big deal. Although we don’t follow a keto diet in our household, I was sure I could come up with a dish that both parties could enjoy. And let me tell you… my Spinach & Artichoke Chicken did not disappoint. It was quick to prepare, financially friendly and simply delicious. I served it with sautéed greens (broccoli & asparagus) and a side salad to suit their eating style, but then I make it again, it would be delightful with some roasted garlic potatoes or even a crusty loaf!

Spinach & Artichoke Chicken
Serves 4 Serving Size: 1/2 chicken breast
  1. Preheat oven to 350F
  2. In a medium mixing bowl combine spinach, artichoke hearts , cream cheese, parmesan cheese, garlic, onion powder salt and pepper
  3. Mix well
  4. Slice chicken breast in half length ways (so they cook faster!)
  5. Place raw chicken breast onto a parchment paper lined baking dish
  6. Pour mixture evenly over the chicken
  7. Bake in oven for 30-45 minutes , until chicken is cooked
  8. Remove from oven and sprinkle mozzarella cheese on top
  9. Place back into oven for few minutes until cheese is melted or broil for a few minutes to make the cheese crispy & golden on top!
