Banana Breakfast Muffins.

*makes 12 muffins
=102 calories per serve
  • 240g oats
  • 2 bananas
  • 2 eggs
  • 50mL coconut water
  • cinnamon

1. Preheat oven to 180degrees.
2. Place all ingredients into a blender
3. Blend until combined
4. Place into individual cupcake moulds or a greased loaf tin
5. Bake at 180degrees for 20-25 minutes until brown
6. Serve warm topped with additional banana slices & a teaspoon of peanut butter or honey.

OPTIONAL: Add mixed berries and vanilla protein powder to the mix for an even sweeter morning protein boost!
