Apricot Chicken.

  • 110g Green beans
  • 60g Baby peas
  • 250ml, French Onion Dried Soup Mix
  • 400mL  Apricot Nectar
  • 190g  Carrot, sliced
  • 129g, Broccoli, chopped
  • 1x Red onion
  • 50g Beetroot, Broccoli & Carrot Slaw (or any veg in the fridge you want to get rid of)
  • 350g Chicken breast, diced
  • OPTIONAL: Serve on top of basmati rice OR mixed veg/ cauli rice/ zoodles/ anything!

  1. Dice all vegetables as suggested above and place into a microwave safe/oven proof casserole dish with lid
  2. Boil carrots until almost tender
  3. Remove carrots, drain and add to casserole dish
  4. Dice chicken and add to veg mix
  5. Mix apricot nectar with dry french onion soup mix in another bowl or jog
  6. Once combined, pour over chicken and veg mix and toss through
  7. Cover and place in microwave or oven for approximately 30 minutes, stirring occasionally, until chicken is cooked through
  8. Remove and let stand for several minutes
  9. Serve on top of rice, mixed steamed veg, cauli rice, zoodles or anything you like. REMEMBER that anything you add will alter the macros/calories of this dish so adjust accordingly to suit your intake.
  10. Eat and enjoy!
