Chicken in Peanut Sauce

*serves 4
=350 calories per serve
  • 500g chicken breast, diced
  • 1 clove garlic, minced
  • 1 brown onion, chopped finely
  • 1/2 cup chicken stock
  • 1/4 cup crunchy peanut butter
  • 1 teaspoon curry powder
  • 1/4 cup honey
  • 2 teaspoons grainy mustard
  • Dash of tabasco sauce

1. Lightly sauté onion and garlic in a pan,  for approximately 3 minutes
2. Stir in chicken and sauté until colour changes
3. Stir in peanut butter, stock, honey, mustard, curry and tabasco sauce.
4. Simmer slowly for approximately 15-20 minutes until cooked
5. Serve on a bed of rice or mixed green vegetables of your choice
6. Enjoy
