Garlic Basil Chicken with Tomato Sauce

*serves 4
  • 1 skinless chicken breast per person
  • salt and pepper
  • olive oil
  • 5-6 roma tomatoes, diced
  • 3 cloves garlic, minced
  • 1 handful fresh basil, cut into ribbons
  • 1/4 cup butter

    OPTIONAL SERVING SUGGESTIONS:

  • vegetables of choice (zucchini, brussel sprouts, green beans, pumpkin, sweet potato, onion)
  • brown rice
  • spaghetti or linguine

1. Sprinkle each chicken breast with salt and pepper to taste
2. Prep the tomatoes, garlic and basil and set aside
3. Make pasta/ rice/ veggies as per packet instructions or however you like
4. Heat olive oil in pan
5. Add chicken breasts and pan fry for several minutes each side until browned.
6. Remove chicken from pan
7. Add tomatoes to pan (once cooled slightly) and simmer down to make a chunky sauce-like mixture
8. Add the garlic and butter and stir to combine
9. Add chicken back to soak in the sauce for a few minutes
10. Just before serving, stir in basil
11. Plate up each dish with a serving of rice/pasta/veg
12. Add chicken breast to each and add additional sauce for extra flavouring
