Grilled Lemon Chicken with Feta Rice.

  • 2 skinless, boneless chicken breast (halved)
  • 4 tablespoons fresh lemon juice
  • 1 tablespoon olive oil
  • 2 teaspoons minced garlic
  • cooking spray
  • 300g brown rice
  • 100g crumbled feta cheese
  • 1/2 cup chopped fresh basil
  • 100g celery
  • 30g pepita seeds
  • salt & pepper to taste

  1. Combine chicken, 4 tablespoons lemon juice, 1 teaspoon olive oil and garlic in a zip lock bag. Toss to coat chicken and let stand for 5-10 minutes
  2. Heat a grill pan over medium to high heat
  3. Coat pan with cooking spray
  4. Remove chicken from bag and discard left over marinade
  5. Sprinkle chicken with salt and pepper then grill for approximately 6 minutes on each side
  6. While chicken cooks, heat rice according to package instructions
  7. Combine rice, celery, feta, pepita seeds and basil in a large mixing bowl.
  8. Serve chicken breast on top of rice
  9. Eat and enjoy!
