Mediterranean Chicken & Orzo.

INGREDIENTS:
  • 2 cups low sodium chicken broth
  • 4oz whole wheat orzo pasta
  • 350g boneless, skinless chicken breast (sliced)
  • 85g onion, diced
  • 20g kalamata olives, sliced and pitted
  • 110g roasted red peppers
  • 75g broccoli, diced
  • 2 cloves garlic
  • oregano
  • salt and pepper
  • olive oil

COOKING INSTRUCTIONS:

  1. Preheat oven to 375 degrees
  2. Boil orzo in chicken stock as per package instructions
  3. In a large pan, heat olive oil
  4.  Add the chicken slices in the pan and cook on medium heat until cooked through and slightly golden on each side
  5. Remove chicken from pan and set aside
  6. Add the onion, broccoli, red peppers, olives and any additional ingredients of choice to the pan and continue to cook, stirring occasionally.
  7. Add the boiled orzo, oregano and garlic to pan
  8. Season with salt and pepper to desired taste
  9. Spoon orzo mixture onto serving plates
  10. Place the chicken slices on top (spoon any additional stock on top for extra flavor!)
  11. OPTIONAL: Sprinkle grated parmesan cheese on top
  12. Serve & enjoy.
