  • olive oil
  • 2 brown onions, diced
  • 2 garlic cloves, minced
  • 1 cup chicken stock
  • 600g chicken breast, diced
  • 150g medium chunky salsa

OPTIONAL SIDES:
– baked sweet potato crisps
– grated cheese
– chobani yoghurt
– avocado

  1. Heat olive oil in pan
  2. Add onion and chicken and cook until they change colour
  3. Add garlic, chicken stock, salsa and black beans and simmer
  4. Remove from heat and serve with sides of your choice
  5. Enjoy!
