Spicy Peanut Chicken Stir-Fry.

INGREDIENTS:
  • 1 cup cooked rice
  •  5 oz. cooked chicken
  • 1/4 cup chopped green onion
  • 1 cup steamed broccoli
  •  1 egg
  • STIR-FRY SAUCE INGREDIENTS:
  • 2 tbsp powdered peanut butter
  • 2 tbsp water
  • 1 1/2 tsp Bragg’s liquid aminos
  • 1 tsp honey
  • 1 tsp ginger paste
  • 1 1/2 tsp chili garlic paste
  • 1/2 tsp black pepper
  • 1/2 tsp Chinese five spice
  • Few drops of Tabasco sauce (optional)

  1. Mix all stir-fry sauce ingredients in a bowl and set aside

  2.  Spray pan with olive oil and scramble one egg (or egg white) over medium-high heat

  3.  When egg is cooked, toss in broccoli and chicken stirring continuously until combined

  4. Add cooked rice and green onions into pan, along with the sauce

  5. Stir to combine then serve & enjoy!
