Spinach, Feta & Cream Cheese Filled Chicken Breasts.

INGREDIENTS:

  • 500g chicken breast
  • 10oz spinach leaves, boiled
  • 30g low fat cream cheese
  • 30g crumbled feta
  • 5g garlic, minced
  • 10g basil pesto
  • salt & pepper

COOKING INSTRUCTIONS:

  1. Preheat the oven to 375 degrees F
  2. Place boiled spinach, cream cheese, feta, garlic and pesto into a small bowl and stir to combine
  3. Slice chicken breast in half (horizontally) to make two thin slices per breast
  4. Carefully slice each 1/2 breast once again to create an opening at one side of each
  5.  Arrange in a shallow baking dish
  6. Raise the top flap of each of the chicken breasts and spoon the spinach/cheese mixture into each
  7. Place the top of each back down
  8. Cover dish with foil and bake for approximately 20 minutes or until cooked through
  9. Remove from oven
  10. Serve & enjoy.
