Summer Chicken Bowl.

INGREDIENTS:
  • 2 tbsp fresh lime juice
  • 1/2 tsp oregano
  • 1/2 tsp onion powder
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1 garlic clove, minced
  • salt & pepper to taste
  • 300g chicken breast, boneless/skinless
  • 100g mango, diced
  • 100g black beans, drained
  • 1/2 cup red onion, diced
  • 100g shredded iceburg lettuce
  • feta cheese, crumbled
  • cottage cheese
  • fresh cilantro
  • hot sauce for dressing

COOKING INSTRUCTIONS:

  1. Slice chicken breasts into evenly sized tenderloins
  2. In a medium bowl, stir in lime juice, garlic, oregano, onion powder, cumin and paprika
  3. Add chicken to bowl and stir to ensure it is coated in marinade
  4. Cover bowl with plastic wrap and refrigerate
  5. Meanwhile, make mango salsa by combining mango, red onion, garlic, lime juice and cilantro
  6. Toss to combine and season with salt. Refrigerate until ready to use
  7. Heat a large pan/skillet on medium heat and spray with olive oil
  8. Add chicken to the pan/skillet and cook until golden on each side
  9. Remove from heat and let rest 10 minutes before cutting into cubes
  10. Serve chicken over a bowl of rice (if desired) with lettuce & kale leaves& black beans
  11. Top with mango salsa, additional lime juice, feta, cottage cheese & cilantro
  12. Drizzle hot sauce
  13. Serve & enjoy.
