Tuscan Chicken & White Beans.

INGREDIENTS:
  • 4 slices smoked bacon
  • 2 chicken breast, halved
  • 1 can cannelloni beans
  • 2 tomatoes, diced
  • 100g spinach leaves
  • 100g red onion, diced
  • salt
  • pepper
  • italian herbs
  • rosemary
COOKING INSTRUCTIONS:
  1. Preheat oven to 350°F
    2. Cut chicken breasts into 2 halves and season with salt and pepper
    3. Add to a frying pan and semi cook until white
    4. On a skillet, cook bacon until crisp
    5. Remove bacon from pan, chop and set aside, reserving drippings and add to pan with chicken breasts and continue cooking until browned
    6. Remove chicken from pan; set aside.
    7. In a separate pan add onion, tomatoes, beans, rosemary, italian herbs and more salt and pepper
    8. Once onion has changed color, stir in bacon and spinach and remove from heat
    9. Arrange bean mix into a shallow baking tray and place chicken pieces on top
    10. Bake, uncovered, at 350° for approximately 30 minutes
    11. Serve & enjoy.
