Jalapeno Tuna Quesadillas.

*serves 1 (but big enough for 2)
=600 calories per serve

  • 150g tinned tuna
  • 3x whole wheat wraps
  • 60g capsicum, diced
  • 60g onion, diced
  • 60g tomatoes, diced
  • 60g shredded cheese of choice (I used sharp cheddar)
  • 50g diced jalapeños
  • 1 tablespoon chilli powder or chilli flakes
  • 1 tbsp sugar-free BBQ sauce
  • spinach leaves


  1. Preheat oven to 350F
  2. Line baking tray with parchment paper
  3. Lay wraps flat and bast evenly yet generously with Bbq sauce
  4. Share the above ingredients evenly between the wraps, and begin layering each of the ingredients (except cheese) covering half of each wrap.
    I layered mine in the following order:
    – cheese, tuna, chill flakes, jalapeños, capsicum, onion, tomatoes, spinach leaves, cheese
  5. Fold over the wraps and press down so that it stay closed- helps when the final layer in step 4 is cheese 🙂
  6. Bake for 10-15 minutes until cheese is melted
    OPTIONAL: Place in sandwich press/ grill for extra crispiness
  7. Remove from oven
  8. Serve over a bed of greens or any sides of your choice & enjoy.
