Lemon Pepper Salmon Cakes.

INGREDIENTS:
  • 1/4 cup oats (ground)
  • 1 egg
  • 1 egg white
  • 100g low fat ricotta cheese
  • 100g onion, chopped
  • 250g canned salmon
  • lemon pepper
  • chives
  • salt & pepper to taste

COOKING INSTRUCTIONS:

  1. Mix all ingredients together in a large bowl
  2. If the mixture is too soft, add more oats. If the mixture is too dry, add another egg white
  3. Shake into round cakes
  4. Spray non-stick frying pan and pan fry until golden on each side
  5. Serve and enjoy – equally delicious when served warm or cold!
