Miso Salmon & Veg

*serves 4
= 300 calories per serve
  • 2 packets of miso soup
  • 4 salmon fillets
  • soy sauce
  • 2x sweet potatoes
  • 1/8 cup milk
  • sweet chilli sauce
  • 1x small onion
  • 1x large zucchini
  • garlic
  • 3x corn, removed from ear
  • chilli powder
  • salt and pepper to taste

1. Peel and dice sweet potatoes and add to boiling water
2. Boil sweet potatoes until soft then remove from heat
3. Remove corn from ear and place in pan with olive oil and chilli powder.
4. Pan fry until brown, then remove from pan
5. Slice onion and zucchini
6. Add to heated pan and fry with garlic until soft
7. Add 1 cup of boiling water to miso soup mixture and add to clean pan
8. Place salmon into pan also and boil until cooked to liking
9. Remove boiled sweet potatoes from pan
10. Add milk and sweet chilli sauce to potatoes and mash until soft and fluffy
11. Remove salmon from pan and serve on a bed of sweet chilli potato mash
12. Add a serving of zucchini and corn to each plate
13. Eat and enjoy!
