Pan Seared Salmon with Jalapeño & Pineapple Relish.

INGREDIENTS:
  • 1 cup chopped pineapple
  • 1/4 cup finely chopped red onion
  • 1/4 cup finely chopped red bell pepper
  • 1 finely chopped seeded jalapeño pepper
  • 1 tablespoon lemon juice
  • olive oil cooking spray
  • chilli flakes
  • salt & pepper
  • 2x salmon fillets

COOKING INSTRUCTIONS:

  1. Combine pineapple, onion, red capsicum, jalapeños and lemon juice
  2. Stir to combine and set aside
  3. Heat a large nonstick skillet over medium-high heat
  4. Spray pan with olive oil
  5. Sprinkle salt, chili powder and black pepper over the salmon fillets
  6. Place salmon into pan (skin side down) and sear each side for approximately 4 minutes or until skin changes color
  7. Remove from pan and serve with pineapple mixture laid on top
  8. Eat and enjoy!
