Salmon & Green Veg Zoodles.

  • 250g Tasmanian Salmon, skinless & boneless
  • 100g baby peas
  • 1x zucchini, spirallised
  • 180g Brussels sprouts, quartered
  • 8x cherry tomatoes, halved
  • 100g green beans
  • 30g spinach leaves
  • basil leaves, chopped
  • garlic, minced
  • 1 tsp oil of choice (olive, coconut, cashew etc)
  1. Prepare ingredients as suggested above
  2. Boil peas and beans in hot water on the stove and steam brussel sprouts
  3. Pan sear salmon fillets until cooked to your liking and then remove from pan
  4. Add oil, garlic, basil and all vegetables to the hot pan and stir fry for a few minutes until zucchini is heated
  5. Serve a bed of the vegetable mix onto a large plate
  6. Top with tomatoes and salmon
  7. OPTIONAL: add basil pesto OR soy sauce to increase flavour
  8. Enjoy while hot!
