TUNA & VEG STIR FRY.

INGREDIENTS:
  • 200g tuna, canned in spring water
  • 120g  Basmati Rice, boiled
  • 100g red peppers, diced
  • 2 cups shredded cabbage/carrot mix
  • 50g onion, diced
  • 50g fresh broccoli, diced
  • 50g fresh green beans, diced
  • garlic
  • 1/4 cup liquid aminos
  • 15mL honey
  • coconut oil
  • 60g raw, unsalted peanut/ cashew mix
  • chilli flakes
  • ground ginger
  • Salt & Pepper to taste
  • sesame seeds for presentation

COOKING INSTRUCTIONS:

  1. Boil basmati rice as per packet instructions
  2. Meanwhile, spray pan with coconut oil
  3. Heat pan on medium and add garlic, liquid aminos & spices
  4. Place all vegetables in pan and stir gently to ensure they are covered with sauce & spices
  5. Cover and cook for 5-10 minutes until vegetables become tender & change color
  6. Add honey, tuna & half the nut mix, stir and continue pan frying until vegetables are cooked to desired consistency
  7. Remove from heat
  8. Serve tuna & veg mix on top of a bed of rice
  9. Finish with sesame seeds & additional nuts
  10. Eat & enjoy!
