Cabbage & Cranberry Salad

Shown in picture below as a side salad with green beans and 
panko crusted fish
 *serves 6
  • 1/2 head purple cabbage
  • 1/4 cup dried cranberries
  • 1/4 cup sunflower seeds
  • 60g feta, crumbled
  • 1/4 cup fat-free raspberry vinaigrette

1. Thinly slice or shred the cabbage
2. Combine the cabbage, cranberries, sunflower seeds, feta and dressing in a large bowl
3. Stir until everything is coated in dressing
4. Eat immediately or store in fridge until serving time
5. Enjoy!
