Chicken, Kale & Sweet Potato Soup.

INGREDIENTS:
  • 350g Diced Tomatoes
  • 400mL Fat Free Chicken Broth/Less Sodium No Msg
  • 320g sweet potatoes, cubed
  • 2-3 cups kale
  • 1 onion, diced
  • 760g  skinless/boneless chicken breast
  • 2 garlic cloves, minced
  • 1/2 tbsp paprika
  • 1/2 tbsp italian herbs
  • 1/2 tbsp onion powder
  • Salt & Pepper to taste

COOKING INSTRUCTIONS:

  1. Pour chicken broth, diced tomatoes, garlic, herbs and spices into slow cooker and stir to combine
  2. Add onion, sweet potatoes and chicken breast in also
  3. Cook on high heat for 4-5 hours or low for 6-8
  4. Reduce to warm once cooked
  5. Remove chicken breast and shred using two forks
  6. Add chicken back into slow cooker (on warm) and add kale leaves also
  7. Allow kale to become soft before serving whilst hot
  8. Enjoy!
