Easy Chicken Chilli.

*serves 4
=350 calories per serve
  • 500g chicken mince
  • 250g brown or basmati rice
  • 1 brown onion, diced
  • 1/2 jar tomato salsa
  • 5cups chicken stock
  • 400g tin mixed beans, drained
  • 10 cherry tomatoes, diced
  • cumin powder to taste
  • chilli flakes
  • salt & pepper to taste
  • olive oil for pan
  • cheddar cheese, grated

1. Add olive oil to pan and heat
2. Once oil is hot, add chicken mince and diced onion and pan fry until brown
3. Add cumin powder, chilli powder, salt and pepper once cooked
4. Add chicken stock, salsa, mixed beans and diced tomatoes to a large pot and bring to the boil
5. Add chicken mince and onion mixture to pot and simmer for ten minutes
6. Either add boiled rice to pot or serve chilli on top of a bed of cooked rice
7. OPTIONAL: Add grated cheddar cheese and spring onions on top!

OPTIONAL ADDITIONS: ginger, red/green capsicum, celery, lentils,
coriander leaves, natural greek yoghurt...anything goes!
