Honey Sesame Roasted Pumpkin Salad with Pine nuts & Feta.

Serve as a side to you favourite main dish!
  • 600g kent pumpkin, diced and seeded
  • 2 teaspoons olive oil
  • 4 teaspoons honey
  • 2 teaspoons sesame seeds
  • 1 tablespoon fresh lemon juice
  • 150g spinach leaves
  • 40g pine nutes
  • 40g pepita seeds
  • 50g feta
  • salt & pepper to taste


  1. Preheat oven to 220C
  2. Line oven tray with baking paper
  3. Place diced pumpkin into a large mixing bowl with olive oil, honey, salt and pepper
  4. Toss pumpkin until well coated
  5. Place pumpkin onto oven tray and place in the oven for 20 minutes or until golden brown
  6. Remove from oven and sprinkle evenly with sesame seeds
  7. Return to oven and bake for a further 5 minutes until seeds are toasted
  8. Remove from oven and set aside for 30 minutes to cool
  9. Place spinach leaves onto serving plate and drizzle with fresh lemon juice
  10. Crumble feta on top of leaves
  11. Add pumpkin, pepita seeds and pine nuts to leaves
  12. Serve & enjoy!
