Slow Cooked Chicken Noodle Soup.

INGREDIENTS:
  • 600g skinless, boneless chicken breast
  • 200g carrots, diced
  • 200g white onion, diced
  • 200g celery, diced
  • 200g thick egg noodles
  • 6 cups low sodium chicken stock
  • 15mL minced garlic
  • 1/2 tsp parsley
  • 1/2 tsp rosemary
  • 1/2 tsp thyme
  • salt & pepper

COOKING INSTRUCTIONS:

  1. Pour chicken stock into slow cooker
  2. Add in chicken breasts and all herbs and spices listed above
  3. Stir to combine before adding in celery, carrots & onions
  4. Cover and cook on low heat for 6-7 hours
  5. Remove chicken from the slow cooker and shredding two forks
  6. Return shredded chicken to the slow cooker and add in egg noodles
  7. Cover once more and cook for an additional 20-30 minutes until noodles are tender
  8. Serve whilst hot.
