Sweet Spring Salad.

  • Organic fat-free feta cheese, crumbled
  • 200-250g chicken breast, sliced into tenders
  • 200g rocket & spinach leaves
  • 40g cashews
  • 1 pear, thinly sliced
  • 10g dried (sugar-free) cranberries
  • lemon, juice only
  • 10g raw honey
  • coconut oil for grilling

1. Heat grill plate/ pan and add splash of coconut oil
2. Grill or pan fry chicken until golden
3. Remove chicken from pan and add cashew pieces
4. Once they have browned, remove from pan
5. Transfer pear slices to pan and grill for 2-5 minutes until they change color
6. In a large mixing bowl, place rocket and spinach leaves
7. In a separate small bowl or jug, mix together lemon juice and honey until combined then pour over leaves and toss until evenly coated
8. Transfer salad leaves to a large serving platter and add crumbled feta cheese over the top
9.  Add grilled chicken, pears and cashews to the leaves, toss lightly
10. Top once more with additional feta cheese and a sprinkle of dried cranberries
11. Eat and enjoy!
