Turkey, Kale & Brown Rice Soup.

*serves 4
=400 calories per serve
  • 2 cups kale leaves, chopped
  • 2 carrots, peeled and diced
  • 1 large brown onion, diced
  • 400g tinned diced tomatoes
  • 250g brown rice
  • 500g turkey mince
  • 5 cups chicken stock
  • chilli powder
  • cumin powder
  • fresh parsley leaves, chopped
  • salt and pepper to taste
  • olive oil
  • OPTIONAL: grated parmesan to serve

1. Heat olive oil in a large pot over medium/high heat
2. Add onions and carrots, stirring frequently until they soften
3. Add turkey mince and stir until meat begins to colour.
4. Add herbs and continue to stir for another minute
5. Add chicken stock, tomatoes and cooked rice and bring to the boil
6. Stir in kale leaves then season with pepper
7. Reduce heat to medium low and cover to simmer until vegetables are tender, approx. 15 minutes
8. Season with salt and pepper to taste
9. Serve whilst hot (optional: sprinkle with grated parmesan cheese)
10. Enjoy!
