(5g F | 5.1g P | 9.3g C)
  • 500g lean chicken mince
  • 1/2 brown onion, diced
  • 2 tbsp barbecue sauce
  • 2 tsp Brandston chutney
  • 50g tomato paste
  • 3 sheets pampas puff pastry
  • 1 egg
  • mixed herbs, salt & pepper to taste

  1. Preheat oven to 180C
  2. Combine chicken mince, onion, sauces & mixed herbs into a large mixing bowl and stir until combined
  3. Slice each pastry sheet in half
  4. Separate  mince mixture evenly amongst the pastry sheets that have now been halved
  5. Spread mixture out to line one length/side of each pastry piece
  6. Roll pastry until sides meet and press closed using a fork
  7. Brush each sausage roll tunnel with egg
  8. Slice each “tunnel” into four smaller pieces
  9. Place sausage rolls onto parchment paper
  10. Place in oven and cook for 15-20 minutes or until pastry is golden and mince is fully cooked
  11. Serve with your favourite sauces and enjoy!
Although I wouldn't suggest eating these as an "every day" food, they certainly make a nice treat every once in a while. Packaged and premade sausage rolls often contain a lot more fats than this recipe (lean chicken mince), so they make the perfect "healthier" party snack too.
