Protein + Veg Kebabs.

*makes approx.15
  • 15 bamboo skewers
  • 250g whole mushrooms
  • 200g turkey bacon
  • 2 chicken breasts
  • 2 brown onions
  • 1 zucchini
  • 1 red pepper
  • 1 green pepper
  • 2 roma tomatoes
  • chilli flakes
  • olive oil
  • salt and pepper

  1. Preheat oven to  low temperature
  2. Dice all vegetables
  3. Line an oven tray with baking paper
  4. Place diced vegetables on oven tray.
  5. Drizzle with olive oil and season with salt and pepper
  6. Cook on low or until slightly tender
  7. Dice chicken breast and season with chilli flakes, salt and pepper
  8.   Sear chicken in frying pan until all sides have changed colour and alms completely cooked through
  9. Fry the turkey bacon once chicken is complete
  10. Remove vegetables from oven and cool slightly
  11. Thread vegetables, turkey bacon and chicken breast onto the bamboo skewers
  12. Place the skewers on the grill to heat and char grill
  13. Eat and enjoy!
